Blueberry and Peanut Butter Muffins


Whenever I don't manage to eat blueberries before they start to get wrinkly I will look for a recipe I can use them in. I have only made blueberry muffins once and this time I wanted to mix it up and add peanut butter. I looked at a few different recipes and came up with these and they taste pretty good. If you love blueberries and peanut butter you would like these for sure.

1/2 cup ground almonds
1 & 1/2 cup wholemeal flour
3 eggs, whisked
1/4 cup coconut oil
1/4 cup milk
1/2 cup light brown sugar
1/2 tsp baking powder
1 cup peanut butter
1/2 cup blueberries
A pinch of sea salt

Prepare your baking tray with muffin cases and turn on your oven to 180C to preheat.

Add the ground almonds, flour, sugar, baking powder and sea salt into a bowl and mix together. In a separate bowl whisk the eggs

Melt the coconut oil add it to the eggs then the milk and the peanut butter and mix it together.

Then add the wet mixture to the dry mixture until it becomes a thick batter, add a bit of extra flour if needed. Fold in the blueberries to the mixture.

Put the mixture into the muffin cases and put in the oven for around 20 minutes (depending on your oven) or until golden brown and cooked. Leave to cool and enjoy!
