On a Sunday afternoon I like to pot around the house and think about my plans for the next week. Naturally I start thinking about what meals I'll be making. Lunch and dinner I find quite easy, I often make double at dinner time and have the rest for lunch the next day. Breakfast is a little tricky. At the weekend I love slow mornings and taking my time to make a good wholesome breakfast. 

During the weekdays I will sometimes skip breakfast or have a smoothie. I don't really have an appetite when I first wake up or give myself much time to make a proper breakfast. So I like to make breakfast bars for the week every now and then. They're so quick and easy to make and I can simply bring a bar with me to work and eat it when I'm ready. 

If you're like me and need some quick breakfast ideas, give these a try. They're delicious and keep you going until lunch time. 
 

Ingredients 
Makes 12

2 ripe bananas
225 grams oats
100 grams blueberries
100ml almond milk (or plant based milk of your choice)
2 tablespoons cashew butter
1 tablespoon ground cinnamon
1 tablespoon honey (or agave syrup for vegans)
1 teaspoon vanilla extract

Preheat the oven to 180C and line a baking tray/tin with baking paper. Mash the bananas with a fork until smooth and place into a large bowl. Add in the oats, almond milk, cashew butter, cinnamon, honey and vanilla extract to the bowl and mix everything together. Then fold in the blueberries gently. Once everything is combined, pour into the baking tray and smooth the mixture so it's about 2 centimetres thick. Put the tray into the oven and bake for 15 minutes. Leave to cool, cut into bars and enjoy!

There are all kinds of love in the world. No two relationships are ever the same. Love can be for more than one human and it can be unrequited. It has changed a lot compared to when our grandparents were our age. There are so many different ways to meet people, it is both amazing and daunting at the same time.

My love story started online. Every day you hear about more and more people who find their person online. 20 years ago it was unheard of. I wasn't looking for it but somehow the magic of the internet connected me with a boy who I could talk to for hours and we quickly became friends. Over time we became more than that and then one day we met face to face. And then began our long distance relationship. 

We have been in a long distance relationship for over a year and we're still going strong. There are 168 miles in between us, although it may not seem like a lot compared to others who have hundreds or thousands of miles to work with, it is far enough. Some days are harder than others but when you're together you forget about it all. 

It feels a little strange talking about something close to my heart but I wanted to share some of my thoughts about being in a long distance relationship and maybe give a little advice and tips to those of you in a LDR. 

What I've learnt about being in a long distance relationship


Make plans to see each other 
We always make sure that we plan for our next weekend together. It's good to have something to look forward to, you can count down the days and think about what you'll do when you're next together. We also think about day trips out and weekends away that we would like to do.

The good and bad of travelling
I love the feeling when I'm in my car on my way to see my love for the weekend. I know it's a matter of hours until I see his face. I have been stuck in traffic plenty of times on a Friday evening and it sucks. Although it is not as bad as the feeling when your heart sinks while driving away from them. Be prepared to spend a lot of time stuck in a car, train or plane. And if you can, try and travel at off peak times. 

Online dates
Technology is a life saver if you're in a LDR. Throughout the day we use WhatsApp and about once every week or two we make time to either Skype, FaceTime or call each other. Simple things like sending a photo of where we are or what we're having for lunch can make us feel like we're closer to each others everyday lives.  

Trust and communication
I find it incredibly easily to trust my guy. I don't even have to think about it. It comes naturally and we both know that we can always talk to each other about how we are feeling. Being emotionally close is just as important as being physically close. 

Embracing time alone
I like having time to myself and I try to fill it with things I like to do like going for coffee with friends, working out or baking. I think it's important to make the most of this time and enjoy being alone while it lasts. Time also goes quicker when you keep busy. 

Take photos and make memories
Every day we spend together is the greatest. Even the little things like making dinner at home together is fun. We also love to go out and visit new places and make memories. I like to capture them so I can look back and be reminded of that happy moment. 

It won't last forever 
Sometimes I have to remind myself that being in a long distance relationship won't last forever. One day this chapter of our relationship will be in the past and it will make us stronger for the future.

Like all relationships it takes a lot of work. Patience. Time. And love. If they make you feel happy even when you're physically apart, that's all that matters. Happy Valentines day, my love x

It has changed a lot compared to when our grandparents were our age. There are so many different ways to meet people, it is both amazing and daunting at the same time.

My love story started online. Every day you hear about more and more people who find their person online. 20 years ago it was unheard of. I feel inspired about what the future 12 months will hold and at the same time I feel low when it's dark all the time. I think everyone in the northern hemisphere can relate to this. There have been some bumps in the road during January but there have been some pretty good moments. This winter has been a slow quiet one. I have embraced it, finding the perfect things to do with my free time and getting ready for the rest of what I hope will be a pretty good year.

When I took these photos it was a good winter day. Nothing extraordinary happened, apart from the magical frost that covered England and the most perfect morning light. It was a Sunday. They are the best for taking it easy and living slowly. I get that happy feeling knowing I have the whole day for myself before the week begins again.


This Sunday in particular I wrapped myself up, picked up my camera and went for a walk around the village first thing in the morning. In winter it is rare for me to be outside in the daylight, so the sun and fresh air truly brightened my mood for the day. It's so peaceful when there are only a few people out and about. Nature never looks more beautiful then when it's covered in frost with the golden light. I was happy I got some good shots. I'm not much of a photographer, amateur at best but I love to find beauty in my surroundings, in a moment and then hold it forever.  These photos will remind me how beautiful winter can be.

I then made my way back home, had a warm bowl of porridge before soaking in a hot bath, There is something about having a bath in the middle of the day that I love, it's a good feeling. I did a little bit of baking and meal prepping for the week. Then I went to the cinema and watched Manchester By The Sea with my sister while I drank a delicious mug of hot chocolate and then went to bed early. So simple but exactly what I needed that day.
 

Every day lately I have tried to do at least one thing for myself. It could be anything from making a good hearty meal, roasted vegetables have been my favourite. Staying in and getting an early night, my body has been craving a good 7 to 8 hours of sleep a night and I try to give myself that rest. Picking up a book and taking in the words from the pages. Buying a bunch of flowers just because. Listening to my favourite albums. Those little things over time make a happy life.  

There is so much goodness in life. Even though some days it doesn't feel like it - especially with current world events. Take the time to cherish the good things. Some days are harder than others and that's okay. Pick yourself up and try again. Relish in the rest of winter. And get ready for what is to come.
