I love all things granola, on the go, as a snack and for breakfast. Granola bars are so delicious and good for fuelling your body with some extra energy. Unfortunately, the ones from the shop can sometimes be bad for us. And if you're like me, can also be picky with what is in the granola bars, I'm not always keen on dried fruit, however I love dried bananas and dates. I prefer mine to be sweet and full of nuts.
For a while now I have wanted to try and make my own granola bars and I finally got round to it today. They are so delicious. So simple to make yourself, you can mix and match what you want in it to suit your tastes and is a little cheaper make than some you can buy. Here is how you can make your own.
Makes 10 bars
200 grams of pitted medjool dates
84 grams of honey
64 grams of peanut butter (or any nut butter you like)
100 grams of chopped almonds*
25 grams of pistachios*
25 grams of chopped hazelnuts *
135 grams of oats
*optional: you can mix and match your favourite nuts, fruit, flavours and you can even add chocolate!
Blend the dates in a food processor for about a minute until it is like dough and can be rolled into a ball. Toast the oats in the oven until slightly golden brown for around 15 minutes at 170 C (optional - you can leave them raw). Put the oats, almonds, pistachios, hazelnuts and dates into a large bowl. Warm the honey and peanut butter together over a low heat. Stir and pour into the oat mix and with a spoon mix everything together. Once mixed thoroughly place it into a lined baking tray. Smooth and flatten out the granola mix. Cover with cling film and put it in the fridge or freezer to firm up for 20 minutes. Then chop up the mix into bars, store in an airtight container. And enjoy.
