It's a little surprising that I haven't made this sooner. Pistachios and white chocolate are two of my favourite flavours. Now that I have I think I'll be baking them more often in the future. That's the beauty of making something yourself, you can mix flavours and ingredients to suit what you love and I really love these cookies. They do taste better the next day, soft and buttery with a crunch. And here is how you make them.
200g plain flour
1/2 tsp baking powder
100g soft butter
100g caster sugar
1 medium egg
1tsp vanilla extract
A pinch of salt
50g chopped pistachio nuts
50g chunky chopped white chocolate
Preheat oven to 180C
Cream the butter, sugar and vanilla extract together
Beat in the egg, then add the flour, baking powder and salt
Mix it all together until combined and make sure you don't overwork the dough
Stir in the pistachio nuts and chocolate
Roll the dough into golf-ball sized round and put on a baking tray and flatten slightly with your hand. Make sure to leave enough room between them because they will spread when baking.
Bake for 15 minutes or until slightly golden.
Then leave to cool and enjoy.
