Blueberry Scones

Every year when it starts to get a little colder and the night falls earlier all I feel like doing is baking. I had some blueberries that needed to be eaten and decided to find a new recipe to use them in, after looking for a little while I went for scones.

You will need..
250g plain flour, 100g granulated sugar, 2 and 1/2 teaspoons baking powder, 1/2 teaspoon ground cinnamon 1/2 teaspoon salt, 115g unsalted butter,  120ml milk, 1 egg, 1 teaspoon vanilla extract, 200g blueberries, tablespoon of sugar for sprinkling on top before baking.

Preheat oven at 200C, line a round baking tray (8"). In a large bowl mix the flour, sugar, baking powder, cinnamon and salt into a bowl. Add the butter and combine with a knife or your fingers until it resembles a course texture. In a separate bowl whisk the egg, milk and vanilla extract together. Then drizzle that over the dry bowl. With a wooden spoon or spatula mix the ingredients together and carefully fold in the blueberries. Put the mixture into your prepared baking tray, sprinkle sugar on top. Finally put the tray into the oven for about 20 to 25 minutes or until lightly golden and cooked through. Take them out cut into even wedge shapes and enjoy.
